RUM OF FIJI

There seems to be something about island paradises and excellent rum. It almost seems like the more sun drenched and idyllic a place is, the more likely the locals are to also be expert crafters of said elixir.

While reading that, most people would think first of the Caribbean and the fine produce from places like Cuba or Barbados, and for good reason. But Central America is not the be-all and end-all of the world of rum, and tropical Pacific Ocean paradises are also staking their claim for rum distilling excellence.

From Lautoka, the Rum Co. of Fiji have actually been making their award-winning spirits since 1980. Parallels with the Caribbean’s best are multiple, and begin from the ground up. Sugar cane is hand cut, and grown in nutrient-rich volcanic soil before making its way to distillation in a combination of column and pot stills and maturation in ex-bourbon casks.

There are broadly two ranges of rums made here, named Bati and Ratu after Fijian warriors and chiefs respectively. The Bati range are the younger, clocking in at two years’ maturity and including classic and modern takes alike, including a white rum and a coconut liqueur. Ratu rums, chieftains of the mix, can vary from five to eight years’ minimum maturation.

INGREDIENTS:

60mL Ratu Spiced Rum

15mL BATI Coffee Rum Liqueur

30mL Fresh Espresso

10mL Sugar Syrup

GARNISH: Grated white chocolate

GLASS: Martini

METHOD: Shake all ingredients with ice and strain into a chilled Martini glass. Garnish with grated white chocolate.

INGREDIENTS:

30mL BATI Coconut Rum Liqueur

45mL White Rum

15mL lime juice

15ml Banana Liqueur

GARNISH: Banana

GLASS: Daiquiri

METHOD: Build on ice & shake. Strain into cocktail glass, garnish with Banana slice.

45mL White Rum

15mL lime juice

15ml Banana Liqueur

GARNISH: Banana

GLASS: Daiquiri

METHOD: Build on ice & shake. Strain into cocktail glass, garnish with Banana slice.

INGREDIENTS:

60mL BATI Spiced Rum

1 lime wedge

Top with ginger beer

GARNISH: Lime wedge

GLASS: Highball

METHOD: Build over ice filled glass.

INGREDIENTS:

45mL BATI Spiced Rum

15mL BATI Coconut Rum Liqueur

40mL Pineapple Juice

20mL Lime Juice

10mL Sugar Syrup

GARNISH: Pineapple leaf

GLASS: Highball/Collins

METHOD: Shake and strain over ice. Garnish with pineapple leaf.

INGREDIENTS:

60mL BATI Dark Rum

15mL BATI Coffee Rum Liqueur

30mL Fresh Espresso

10mL Sugar Syrup

GARNISH: Coffee Beans

GLASS: Martini

METHOD: Shake all ingredients with ice and strain into a chilled Martini glass. Garnish with Coffee Beans.
